In this class we will explore some of the underdogs of the produce world. There was a time when the only root vegetables anyone paid attention to were carrots and potatoes. Turnips were déclassé, celeriac unheard of, and beets are a pain to clean. Those perceptions have changed. If you’re going to eat seasonal and local, you are going to eat roots in winter. Learn how to cook them to perfection.
